Sweet Chex Mix

This is a fabulous and easy recipe. It makes a great snack that lasts for several days.

Sweet Chex Mix

9 cups corn chex or Crispix
1 cup firmly packed brown sugar
1 stick butter
1/4 cup light corn syrup
1/4 tsp baking soda
1 cup M&M's
1 cup peanuts or mixed nuts
Heat oven to 250. Spray 13x9-inch baking pan with no stick cooking spray; place cereal in pan.
Combine brown sugar, butter, and syrup in a 2 qt saucepan. Cook over medium-high heat until mixture comes to a boil (2-3 minutes). Continue cooking, stirring constantly (1 minute). Remove from heat. Add baking soda. Mix well.
Pour syrup mixture over cereal; stir gently until well-coated. Bake for 20 minutes; stir. Continue baking for 20 minutes. Remove from oven. Stir in M&M's and nuts.
Spread mixture onto wax paper; cool 30 minutes. Break cooled mixture into pieces. Store in airtight container.

Boil for 2-3 minutes. It looks like this

Yum. Be warned. It is very addictive.

Hi Vickie!

Thanks for the recipe...I think. I may be in trouble unless you come up with a South Beach version!

Love,
Nancy

Do you just use the corn chex cereal?

I have used both the corn chex cereal and Crispix. I think I like them equally well.
